The gift that keeps on giving

 Rock and roll chef in the making baking?

The lavender hedge here is in full bloom so we made Hummingbird Bakery Lavender Cupcakes, recipe taken from the card accompanying a recent Elf gift, and posted here especially for Jem.
Made yesterday, but only eaten today as Claud and I made ourselves sugar-sick on the icing yesterday!


Lavender icing. Truly heavenly.


Those parchement bun cases (on the card) have the look of a cupcake wet t-shirt contest, cheaping the wonderful recipe. Our classy shiny silver cupcake dresses do it justice. Shame about the icing. I'm not the only one about with icing problems. Tips anyone?!

Best cupcakes ever to date, and I've eaten and baked a few. And dead easy. Recommended. Highly.

  1. I have this recipe and have been wondering about trying them - you've convinced me to give them a go!
    Your icing looks fine from the photos...with buttercream, I always find that the temperature of the butter has a HUGE impact (soft but not warm), as does beating it for ages (like 5mins+ so it gets light and fluffy), and working quickly with it so it doesn't have a chance to dry out while you're spreading/piping it.
    I don't know if that helps at all, but they look good anyway :)

  2. Fantastic looking cupcakes! I love the lavender flavour. The icing I always make is 1 cup icing sugar, 2 tablespoons boiling water and the taste of your choice. From my grandma's 1935 cookbook!

  4. Well you two had fun! Your cupcakes look great. Just a wee thought..I notice that you have put little sprigs of lavender dentata on the top of your cupcakes. I have always understood that it is the english lavender that is best for use in cooking (it was quite nice in some shortbread I made once) I have just had a bit of a google & can't see that it would do any harm but most people still seem to recommend the dentata to be used mainly for decorative purposes. I think I will persist with my research because I want to know for sure now. Love the doily bunting. Much love Catherine x

  7. Ooh never tried lavender cupcakes, but you're tempting me now (although I'll have to wait MONTHS to get any from my garden, damn these seasonal differences!). Claud is clearly cut out for a future TV series as a chef x

  8. Butter cream is my go-to icing. I much prefer the wavy back of a knife look to the piped scatological spirals anyway.
